Root Vegetable Soup

This soup gets its velvety texture from sweet potato, butternut squash, cauliflower, and red lentils. The starch helps to achieve a creamy purée without the need to add any actual cream. Red chiles, red miso, turmeric, mustard powder, and a splash of apple cider vinegar add punchy flavor and nutrition.
